Also, Copart is not an appraisal company. Copart is a salvage vendor that Farmers uses to auction the totaled vehicles. Farmers uses CCC One to determine the value. The value of your vehicle is affected by mileage, options, and the pre-accident condition. There are two issues with KBB retail values: 1) they don't adjust for mileage over 200k and 2) their retail value accounts for dealer overhead. Your policy is most likely only for actual cash value (private party) unless you owe a brand new car and have an endorsement for replacement cost value. Also, the California DOI does not recognize KBB or NADA as valid valuation sources. They require actual comparable vehicles to determine the value.
In this situation you need to make sure that you have coverage to pay for the loss and support with actual vehicles showing that similar vehicles are consistently priced higher in the local market.
