"... was told that there was no record of the payment plan being extended. I produced my paperwork and sent it to all parties involved but got no response from anyone. Then went down to Frys and there was no record of any extended payment plan(evidently my sales person did not have the authority to do such a deal). "
You repeatedly mention your paperwork and sending it in, but you fail to mention what the contract says.
Does it say you had a 3 year OR a 5 year interest free period?
If you're just going on what the salesman told you, or what you understood him to say, you don't have a prayer of winning this. A salesman's word isn't worth the paper it's written on.

It may, indeed be unfortunate, but I doubt it rises to the level of robbery or a criminal act.
