This is really weird, I have never been on a delayed flight without a reason being provided by the airline. If they didn't explain why, I'd want more than a meal voucher especially since it pushed the rest of my plans back 7 hours. At the very least it is horrible customer service to not inform people of what is happening.
This is a good negotiation tactic to start high and see what American Airlines offers back. 7500 miles is nothing and won't take you anywhere.
As for the luggage, depending on what was included, I would definitely want more of it back. If I had to re-purchase new items because of their incompetence they should pay for it. They lost it, you lost 2 days of use of your personal effects
I'd press them.

Unreasonable Demand

Your flight was delayed a few hours. Unfortunate..yes. Inconvienient..yes, But asking for an entire refund takes this to the category of you being unreasonable and greedy.
The fact is your flight contract, yes your ticket is a contract in effect states that they will get you from point A to point B. There is no gurantee that they will always be on-time, in fact there are statements to the fact that they can't guarantee it. However, if you miss a connecting flight due to their issue they will get you on another flight. You were late, missed your connection, they booked you on another flight and you got to your final destination.
Now, should you get some compensation...personally while they are not required to, IMO you should. You were delayed an extra 7 hours, that would be a meal. So that would be about $10/person, but let's be generous and give you $20/per person. That's about $40. Your bag being misplaced for 2 days, perhaps refund any baggage fees you had to pay. Perhaps give you a few extra dollars or flight credits for your inconvieneince.
They are offering you 7500 miles, now they generally don't offer miles to people unless they have a Frequent Flyer account. So you most likely have one, and may have even paid for this trip with miles. That all goes into what would be a reasonable accomodation.
By the way since you mentioned a judge, one must figure you are saying you are going to sue them. Well I don't know the the legal system of Canada or where you plan to sue them. But it will cost you at least a few hundred dollars to file the case. If you loose that you will not get your legal fees back. Even if you prevail getting your legal fees is most likely not guaranteed, especially if the judge feels that their offer was reasonable and there was no need for a suit. Of course you are going to say that you know you will win. You may even say things like..well once they realize how much it is going to cost them to defend the suit they will just pay me. Perhaps you are right..or perhaps you will realize that as a major corporation they have attornies on staff who get paid either way and it costs them nothing extra to defend the suit.

Delayed flight refund?

I have flown on various Airlines for years and have experienced delays due to mechanical as well as weather. It is a chance you take when using the airlines. I beleive you to be a little self centered to ask for a refund.
Did you arrive at your final destination?
Did your luggage arrive intact?
I find it very hard to beleve your time is that valuable. If it is hire a private jet next time.
