My son graduated with a AAS degree as a graphic designer at Collins College at Tempe AZ. He is in debt of 30,000 that was paid to Collins College. He applied at NAU university but majority of his credits do not count.

What was the point of paying so much to Collins College if the universities do not except their credits. The Maricopa Community Colleges do not ackowledge them.

How should we initiate a law suit against them?

The short answer is you can't file a lawsuit because they haven't done anything illegal (based on what you wrote).  They are a proprietary school, meaning they are owned by a corporation. The credits earned at these kinds of schools are rarely transferable. The transfer of credits is always up to the receiving institution, and unless there is a transfer guarantee in place (as with most state community colleges and their four-year counterparts) you're screwed.

Depending on what your son wants to study, one option might be to take CLEP exams and test out of the basic English and math courses so that his Bachelor's degree takes less time (and money).  He can probably get more information about that at his new school.

Good luck!
